पनीर बिरयानी बनाने की विधि Paneer Biryani Recipe

Ingredients:

  • 2 cups basmati rice
  • 200 grams paneer (cottage cheese), cubed
  • 1 large onion, thinly sliced
  • 2 tomatoes, chopped
  • 1 green chili, slit
  • 1 tablespoon ginger-garlic paste
  • 1/2 cup plain yogurt
  • 1/2 cup chopped mint leaves
  • 1/2 cup chopped coriander leaves
  • 1 teaspoon biryani masala powder
  • 1/2 teaspoon turmeric powder
  • 1/2 teaspoon red chili powder
  • 1/2 teaspoon garam masala powder
  • 1/4 cup milk
  • 1/4 cup ghee (clarified butter) or oil
  • Whole spices (2 bay leaves, 4 cloves, 4 green cardamoms, 2-inch cinnamon stick)
  • Salt to taste

Instructions:

  1. Wash the basmati rice thoroughly and soak it in water for 30 minutes. Drain the water and set the rice aside.
  2. Heat ghee or oil in a large pan or pressure cooker. Add the whole spices (bay leaves, cloves, cardamoms, and cinnamon) and sauté for a minute until fragrant.
  3. Add the sliced onions and cook until they turn golden brown.
  4. Add the ginger-garlic paste and green chili. Sauté for a minute until the raw smell disappears.
  5. Add the chopped tomatoes and cook until they become soft and mushy.
  6. Add the biryani masala powder, turmeric powder, red chili powder, and garam masala powder. Mix well and cook for a minute.
  7. Add the cubed paneer and gently stir to coat it with the spice mixture. Cook for a few minutes until the paneer is slightly browned.
  8. In a separate pot, bring water to a boil. Add salt to taste and cook the soaked basmati rice until it is 70% cooked. Drain the rice and set it aside.
  9. In a small bowl, mix yogurt and milk together.
  10. In the pan with the paneer mixture, layer half of the partially cooked rice over the paneer.
  11. Sprinkle half of the chopped mint leaves and coriander leaves over the rice.
  12. Drizzle half of the yogurt and milk mixture over the herbs.
  13. Repeat the layering process with the remaining rice, herbs, and yogurt-milk mixture.
  14. Cover the pan tightly with a lid and cook on low heat for about 15-20 minutes until the rice is fully cooked and flavors have melded together.
  15. Once cooked, gently fluff the rice and mix it with the paneer mixture.
  16. Serve the Paneer Biryani hot with raita or any side dish of your choice.
