Veg Biryani Recipe: वेज बिरयानी रेसिपी

 Veg Biryani, also known as Vegetable Biryani, is a popular Indian rice dish made with aromatic basmati rice, mixed vegetables, and a blend of spices. Here's a simple recipe to make Veg Biryani:

Ingredients:


  • 2 cups basmati rice
  • 2 tablespoons ghee or vegetable oil
  • 1 large onion, thinly sliced
  • 2 green chilies, slit lengthwise (optional)
  • 1 tablespoon ginger-garlic paste
  • 1 cup mixed vegetables (carrots, beans, peas, cauliflower, etc.)
  • 1 teaspoon turmeric powder
  • 1 teaspoon red chili powder (adjust to taste)
  • 1 teaspoon biryani masala powder
  • 1 cup plain yogurt
  • A handful of mint leaves, chopped
  • A handful of coriander leaves, chopped
  • Salt to taste
  • 4 cups water
  • Saffron strands (optional)
  • 2 tablespoons warm milk

For the Biryani Masala:

  • 1 cinnamon stick
  • 4-5 cloves
  • 4-5 green cardamom pods
  • 2-3 bay leaves
  • 1 teaspoon fennel seeds
  • 1 teaspoon cumin seeds

Instructions:

  1. Wash the basmati rice under running water until the water runs clear. Soak the rice in water for 30 minutes, then drain and set aside.
  2. Heat ghee or oil in a large, heavy-bottomed pot or pan. Add the sliced onions and green chilies (if using) and sauté until the onions turn golden brown.
  3. Add the ginger-garlic paste and cook for another minute until the raw smell disappears.
  4. Add the mixed vegetables to the pot and sauté for a few minutes. Then, add the turmeric powder, red chili powder, and biryani masala powder. Mix well to coat the vegetables with the spices.
  5. Stir in the plain yogurt, mint leaves, and coriander leaves. Season with salt to taste.
  6. Drain the soaked rice and add it to the pot, mixing gently with the vegetable mixture.
  7. Pour water into the pot and bring it to a boil. Reduce the heat to low, cover the pot with a tight-fitting lid, and cook for about 15-20 minutes, or until the rice is cooked and the flavors are well combined.
  8. While the rice is cooking, you can prepare the saffron milk. Soak a few saffron strands in warm milk and set aside for a few minutes.
  9. Once the rice is cooked, remove the pot from heat and let it sit, covered, for another 5 minutes.
  10. Remove the lid and fluff the rice gently with a fork. Drizzle the saffron milk over the top for an attractive color and aroma.
  11. Serve the Veg Biryani hot with raita (yogurt dip) or a side salad.
