Veg Biryani Recipe: वेज बिरयानी रेसिपी
Veg Biryani, also known as Vegetable Biryani, is a popular Indian rice dish made with aromatic basmati rice, mixed vegetables, and a blend of spices. Here's a simple recipe to make Veg Biryani:
Ingredients:
- 2 cups basmati rice
- 2 tablespoons ghee or vegetable oil
- 1 large onion, thinly sliced
- 2 green chilies, slit lengthwise (optional)
- 1 tablespoon ginger-garlic paste
- 1 cup mixed vegetables (carrots, beans, peas, cauliflower, etc.)
- 1 teaspoon turmeric powder
- 1 teaspoon red chili powder (adjust to taste)
- 1 teaspoon biryani masala powder
- 1 cup plain yogurt
- A handful of mint leaves, chopped
- A handful of coriander leaves, chopped
- Salt to taste
- 4 cups water
- Saffron strands (optional)
- 2 tablespoons warm milk
For the Biryani Masala:
- 1 cinnamon stick
- 4-5 cloves
- 4-5 green cardamom pods
- 2-3 bay leaves
- 1 teaspoon fennel seeds
- 1 teaspoon cumin seeds
Instructions:
- Wash the basmati rice under running water until the water runs clear. Soak the rice in water for 30 minutes, then drain and set aside.
- Heat ghee or oil in a large, heavy-bottomed pot or pan. Add the sliced onions and green chilies (if using) and sauté until the onions turn golden brown.
- Add the ginger-garlic paste and cook for another minute until the raw smell disappears.
- Add the mixed vegetables to the pot and sauté for a few minutes. Then, add the turmeric powder, red chili powder, and biryani masala powder. Mix well to coat the vegetables with the spices.
- Stir in the plain yogurt, mint leaves, and coriander leaves. Season with salt to taste.
- Drain the soaked rice and add it to the pot, mixing gently with the vegetable mixture.
- Pour water into the pot and bring it to a boil. Reduce the heat to low, cover the pot with a tight-fitting lid, and cook for about 15-20 minutes, or until the rice is cooked and the flavors are well combined.
- While the rice is cooking, you can prepare the saffron milk. Soak a few saffron strands in warm milk and set aside for a few minutes.
- Once the rice is cooked, remove the pot from heat and let it sit, covered, for another 5 minutes.
- Remove the lid and fluff the rice gently with a fork. Drizzle the saffron milk over the top for an attractive color and aroma.
- Serve the Veg Biryani hot with raita (yogurt dip) or a side salad.
